Delicious Comfort Food: Soup Recipes for a Cold Winter Day

Rustic Homemade Tortellini SoupHere are 3 of my family’s favorite soups that are truly comfort foods.  There’s just something about making a big pot of soup on a winter day that makes the cold so much more enjoyable.

Tortellini Soup

This is a hearty soup.  I have 5 boys (4 are teenagers!) and they love it.  I serve it with a loaf of Italian or French bread, and we top it with grated Parmesan cheese. 


  • 2 Kielbasa, diced
  • 1 onion, chopped
  • 2 cloves garlic
  • 1 T olive oil
  • 28 oz. can diced tomatoes
  • 1 cup tomato sauce
  • ½ cup sherry
  • 5 cups chicken broth
  • ½ tsp. Basil
  • ½ tsp. oregano
  • 3 bags frozen tortellini


  1. Brown the diced kielbasa in the bottom of a large soup pot.  I like for it to get crunchy around the edges.
  2. Add onion, pressed garlic, and olive oil to the kielbasa and cook until onions are soft.
  3. Add tomatoes, tomato sauce, sherry, chicken broth and spices.
  4. Cook for 30 minutes over medium to medium low heat. 
  5. Add the tortellini and cook an additional 6 minutes or until tortellini are cooked to your liking.


Lasagna Soup

This is another hearty soup that my kids are crazy about.  It is so delicious!


  • 2.5 lb. ground beef
  • 1 T olive oil
  • 1 cup chicken broth
  • 2 cups beef broth
  • 14 oz. can diced tomatoes, drained
  • 32 oz. can crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • ¼ cup Parmesan cheese
  • 2 cloves garlic
  • 1 – 2 tsp. crushed red pepper
  • ½ tsp. basic
  • ½ tsp. oregano
  • Salt to taste
  • Elbow macaroni
  • 1 box Texas Toast


  1. Brown ground beef.  Remove from skillet and set aside.
  2. In olive oil, sauté the garlic and herbs.
  3. Add tomatoes and broth to the spices.
  4. In separate pan, cook macaroni.  Drain.
  5. Mix noodles, meat, sauce and cheeses together.
  6. Cut Texas Toast into crouton sized pieces and bake according to directions on box.
  7. To serve, put croutons on bottom of bowl, add soup, top with additional cheese if desired.

Cheesy Bacon & Potato Soup

This is a recipe that all my friends ask for whenever I make it.  Definitely a crowd pleaser!


  • 5 medium potatoes, cooked & cut into bite-sized cubes
  • 6 T butter
  • 2/3 cups flour
  • 6 cups milk
  • 1 cup sour cream
  • 2 cups cheddar cheese
  • salt and pepper to taste


  • Crumbled bacon
  • Cheddar cheese
  • Diced scallions


  • In a large stockpot, melt butter.
  • Add flour and whisk until all of the flour is mixed in and it forms a paste.
  • Slowly pour in milk a little at a time, whisking as you go.
  • Continue to stir about 10 minutes over medium heat until milk thickens slightly. Don’t let it boil.
  • Add potatoes, sour cream, and cheddar cheese.
  • Heat until cheese is melted.
  • Serve with toppings.
