Zucchini Soup – OAMC Recipe

Zucchini Soup

I love to make the first portion of this recipe during zucchini (and yellow squash) season in bulk and enjoy zucchini year-round.

Cooking day:

3 cups of sliced zucchini or yellow squash, seeds removed

1/2 cup water

1 tsp. seasoned salt

2-3 chicken boullion

1 tsp. minced onion

Cook until zucchini/yellow squash are tender then smash until Smooth, freeze in 1 quart freezer bags.

Serving day:

2 TBS butter

2 TBS flour

1/8 tsp. pepper

1/4 tsp celery seed

2 cups of milk

Cook all serving day ingredients until thick, then add the zucchini mixture.
