Oh Shawn, that creamy mexican chicken recipe looks wonderful. I will be trying it soon, as soon as the temperatures start feeling like fall.

Default Crockpot Corn Potato Chowder

Crockpot Corn Potato Chowder
We love this!!!
2 cups chicken broth
5 potatoes - cubed (red ones with skin on is best)
2 carrots - cut up
1 bag of frozen corn
1 package of Spanish Chorizo sausages
1 bag baby spinach leaves, roughly chopped (or half bunch silverbeet/other leafy greens)
1 large tin Chinese Chicken and Sweet Corn soup (or creamed corn)
seasonings to taste
Chuck it all in the crockpot, turn it on low for about 8 hrs, or high for about 4 hrs.
Yum!

OMG, when I turned on the computer this morning one of my goals was to find some really good crock pot recipes - this is heaven sent. DH and I were talking about vcranking up both pots & using our freezer more to save time and money. Many thanks ladies! Can't wait to get started.

I can only agree...I specifically came looking for recipes and found all of these crockpot ideas...I love my crockpots and use them often...

Do you all use most of these recipes in your OMAC preperation..I guess what I am asking is do you all freeze these recipes as well as use them for meals?

Pumpkin Pie Pudding

Ingredients:

1 (15 ounce) can solid pack pumpkin
1 (12 ounce) can evaporated milk
3/4 cup sugar
1/2 cup biscuit/baking mix
2 eggs, beaten
2 Tablespoons butter or margarine, melted
2 1/2 teaspoons pumpkin pie spice
2 teaspons vanilla extract
whipping cream

In a large bowl, combine the first 8 ingredients. Transfer to slow cooker coated with nonstick cooking spray. Cover and cook for 4 hours or until a thermometer reads 160 degrees F. Serve in bowls topped with whip topping.

Slow-Cooker Posole
Ingredients:
1 Tablespoon canola oil
2 lb boneless pork loin cut into 1" cubes
2 (14.5 oz) cans mild enchilada sauce
2 (15.5 oz) cans hominy, drained
1 onion, sliced
1/2 cup green chillies, diced
4 cloves garlic, minced
1/2 teaspoon cayenne pepper
2 teaspoons dried oregano
2 teaspoons salt
1/4 cup cilantro
1 bunch radishes, sliced
1/2 head cabbage, shreded
lemon juice

1. Heat the canola oil in skillet over high heat. Add the pork; cook and stir just until meat is browned on all sides, about 5 minutes.
2. Place the meat in a 4 quart slow cooker (or larger). Pour the enchilada sauce over the meat. Top with the hominy, onion, chilies, garliccayenne pepper, oregano and salt. Pour in enough water to fill slow cooker.
3. Cover, and cook on high for 6 to 7 hours. Serve in bowls sprinkled with onion, radishes, cilantro and cabbage.

Slow Cooker Pulled Pork
Ingredients:
1 - 2# pork roast or tenderlion
1 -12 oz can rootbeer
1 -18 oz bottle favorite Bar-BQ sauce
Hamburger buns

Directions:
Place pork in crock pot; pour rootbeerover meat. Cover and cook on low until well cooked and the pork shreds easily, 6-7 hours. Drain well stir in BarBQ sauce. Cook until re-heated.

I am making this for dinner tonight. It sounds Yummy. I got this from allrecipes.com my favorite place to get and try new recipes.

Heather it was wonderful. Everyone even my DH who doesn't like Bar BQ sauce gobbled it up. This is something I will make again!

Split Pea and Lentil Bean Soup

I love this recipe because it's so simple, good for the family and inexpensive.

8 oz of dried split peas
4 oz of dried lentil beans
Salt and pepper to taste
2-3 tsps of dehydrated onions

Mix together in crock pot and add water. Some like split peas 'soupy' and some like them thick. Whatever you like determines the water. I add a smoked turkey wing for some inexpensive protein (I take it out, let it cool, shred it and add it back into the soup).

Turn on the crock pot and let it do its thing. Great with biscuits or crackers or fresh veggies.

I have a freezer full of whole chickens that we raised this spring.....I'm going to have to figure out how to use all these nummy recipes with whole chickens and not breasts. But oh, I'm willing to give it a shot.

Slow Cooker Sloppy Joes

2 lbs. hamburger
1 cup chopped green pepper
2/3 cup chopped onion
2 cups ketchup
2 envelopes sloppy joe mix
1/2 cup packed brown sugar
1 tsp. prepared mustard
buns

In large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink. Drain. Stir in the ketchup, sloppy joe mix, brown sugar and mustard.

Transfer into your slow cooker. Cover and cook on low for 4 hours. Spoon onto buns. ENJOY!

Yields 12 servings.

I made this the other night and it was so good that I dont think I will ever make a meatloaf in the oven again. I did not put the sauce on top because I was making mashed potatoes and gravy.. but I have used that sauce recipe when making meatloaf in the oven and it is really good too.

Will feed 8 hungry people or 10-12 not so hungry
