Default Spring/Summer Recipes

Does anyone have any recipes they would like to share for light summery meals? I am SO looking forward to the summer air and eating outside at the picnic table while the kids play in the pool......

During summer these are some of the things we live to eat for dinner. Living in Florida it is TOOOOOO hot to heat up the house with the stove/oven.

Tuna-either a sandwich or just on lettuce with sliced tomatoes and a few crackers.

A tossed salad with some grilled chicken breast (DH grills it then I chop it up and put it on top)

Veggie pasta. Chopped squash, zucchini, onions sauted with garlic and EVOO. Add a jar of your favorite spaghetti sauce and toss with angel hair pasta. YUMMY!

Spring Salad
1 can sweeten condensed milk
1 cup white Vinegar
1 cup Sugar
Mix Well
2 cup Miracle Whip

1 lb shell macaroni (cooked)
1 lb sliced carrots
2 stalks celery
1 cucumber
1/2 lb radishes

Mix all together chill for 2 + hours

Hubby bought me a huge grill last summer. He is a huge meat and potatoes man, so when I grill out.....I take aluminum foil and spray is with oil. Then I slice potatoes, onions and peppers overtop, salt and add a dollop of butter. Seal all the edges to make a pocket. Then I add to the grill along with the meat and some corn on the cob (still in the husks). It usually only takes about 10 minutes on each side of the foil and the potaotes are done. Add your drinks and maybe a salad and you have a complete meal in minutes.

This is a light summery dessert.

Green Salad Dessert

1 4oz. package lime jello
1 small container small curd cottage cheese
1 8oz. coolwhip
1 small can crushed pineapple (drained)

Mix all together and refrigerate at least 1 hour before serving. It's best to mix the night before and the flavor will go thru it more.
