Default Halibut Bake

4- 3-4oz. halibut fillets
4 T. light mayo
lemon pepper seasoning

Directions: If necessary, remove skin from halibut by heating a skillet and placing skin side down for a few seconds. Remove fish and skin should peel off easily. Spray a baking dish with non-stick spray and arrange fish. Top each fillet with 1 T. of light mayo and sprinkly with lemon pepper seasoning. Bake at 350*F for about 20 minutes, or until center is done.

Serves: 4
Per serving:
169 calories; 23g protein, 2g carbs, 0g fiber, 8g fat, 40mg cholesterol, 179mg. sodium

Cheesy Chicken Pot Biscuit Cups

Serves 5 (2 each)
1 (7.5 oz.) can of refrigerated homestyle or buttermilk biscuits
1 cup (5 oz.) diced chicken breast
1 (10 1/2 oz.) can healthy request cream of chicken soup
scant 2/3 cup (2 1/2 oz) shredded kraft reduced-fat cheddar cheese (I used the Kraft fat free kind and worked fine.)
1 teaspoon dried parsley flakes (I did not have this so I used oregano and basil seasoning)
1/4 teaspoon black pepper

Preheat oven to 400 degrees. Separate biscuits and place each biscuit in a cup of an ungreased 12-hole muffin pan, pressing dough up sides to edge of cup. In a medium bowl, combine chicken, chicken soup, cheddar cheese, parsley flakes, and black pepper. Mix well to combine. Evenly spoon chicken mixture into prepared biscuit cups. Bake for 12 to 15 minutes or until golden brown. Remove from oven. Place muffin pan on a wire rack and let set for 2-3 minutes. Serve at once.

Points per serving : 5
Serving size - 2 each.

Baked Chicken Tenders * 5 points*
________________________________________
3 oz of boneless skinless chicken breast
1 TBSP Shake n Bake Regular
2 Tsp Parmesan cheese

Slice chicken into strips

Mix Shake n bake and Parmesan Cheese in small ziploc baggie.
Individually place tenders into bag and shake to coat.
Place tenders in pan sprayed lightly with no fat no calorie cooking spray.

Bake at 350 for 25-30 minutes.

5 Points for 3-4 tenders

Chicken Pot Pie
Per serving: 307 Calories, 7g Fat, 3g Fiber
6 Points per serving

3-oz skinless, boneless, cooked chicken (cut into bite size pieces)
cup frozen mixed vegetables, thawed
cup low fat condensed cream of chicken soup
2 Tbs. Chicken Broth
1 unbaked refrigerated buttermilk biscuit

In a 2 cup casserole combine the chicken, vegetables, soup, and broth
Flatten biscuit dough to the diameter of the casserole dish and set over filling; press edges to casserole rim to seal
Bake at 350 degrees in a toaster oven until golden brown, about 10 minutes.

3 pieces Banquet Baked Breast Tenders (2)
8 oz cooked potato (3)
Vegetable (0) or Salad with dressing on side (1)
Total Points (6 or 7) - depending on vegetable or salad

Layered Tortilla Bake
Makes 8 Servings
Ingredients
1 pound VERY lean ground beef
1 can dark red kidney beans, drained & rinsed
1 pkg (1.25 oz) McCormicks 30% less sodium Taco Seasoning
1 pkg (10 oz) corn tortillas (12, 6-inch tortillas) -
1 cup (4 oz) shredded low fat cheddar cheese
Preheat oven to 350 degrees. Brown ground beef in large nonstick skillet;
drain well. Mix in beans and taco seasoning mix. Reduce heat;
simmer 5 min. Spray 9 x 13 " baking dish with nonstick cooking spray. Cut
tortillas in half; place half of them in bottom of baking dish, overlapping.
Spoon half of beef mixture evenly over tortillas. Cover with remaining
tortillas and then remaining beef mixture. Top with cheese. Cover; bake 25 min.
POINTS: 5.5

Pepperoni Pizza Pouches

Makes 4 servings
Ingredients
One 10-ounce tube refrigerated pizza dough
4 tbsp fat-free pasta sauce
4 tbsp shredded part-skim mozzarella cheese
8 slices pepperoni

Preheat the oven to 425 degrees; spray a nonstick baking sheet with nonstick cooking spray. On a lightly floured work surface, unroll the dough. With your hands, press it into a square; cut into 4 squares. Place the dough on the baking sheet. Spread the dough with the pasta sauce and sprinkle with the cheese. With the dough on the diagonal, fold in the corners as bi-fold rolls, pressing the corners gently to seal; leave some of the pasta sauce exposed. Place a pepperoni slice on the exposed pasta sauce. Bake until the cheese melts and the crust is golden brown, 10-15 minutes.
SERVING SIZE: 1 square

Cola Chicken

Makes 4 servings
Ingredients:
4 skinless boneless chicken breasts
1 cup catsup
12 oz can diet cola
Put chicken in non-stick skillet. Pour catsup and diet cola over the top. Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce and it's only 4 points per serving. POINTS: 4

Your cheesy biscuits Pot sounds so good. I am finding so many recipes to try. Is there a place to say if you like it or not or maybe a better word would be to rate it.
