We are always on the lookout for cheap meals and easy dinner recipes! One tip that I use often is to have breakfast meals for dinner. Here are some easy dinner recipes that won’t break the budget.
Pancakes from Scratch
Make up a batch of this pancake mix – it can last for several months in an airtight container.
- 6 cups all purpose flour
- 2/3 cups sugar
- 1 1/2 teaspoons salt
- 2 tablespoons baking powder
- 1 tablespoon baking soda
- 1 egg
- 3/4 cups of milk
These are great to make when you are short on time, and short on money!
Use your imagination and make your scrambled eggs unique! Scramble your eggs with ingredients such as: cooked ham, tomatoes, bacon, cheese, spinach, hashbrowns, onions, green peppers, salsa, fresh herbs such as basil, even sauteed garlic with pepperoni!
One of the tricks to making the perfect fried egg is to let your eggs get to room temperature before frying. Spray cooking oil in your skillet and set on medium heat. Once your skillet is to temperature, add the egg. If you like your eggs over easy (runny yolk) wait until the first side has finished cooking (it should take about 3 minutes) before you try to flip the egg. If you flip the egg too soon, the egg will stick to the pan and your yolk will break. I like to spray my spatula with cooking spray – it makes it easier to flip the egg. Once you’ve flipped your egg, allow it to cook for another 1 -2 minutes. Sprinkle salt and pepper (or better yet – lemon pepper!) on your eggs and serve on a roll or toast.
